Join us for the first of our Monday Hospo Workshop series. These workshops focus on ferments and techniques that those working in the hopso industry might enjoy. We will run them once a month and they are hosted by guests working in the industry. 


Dennis Yong of Furrmien / PARCS restaurant creatively repurposes fruit and vegetables that would otherwise end up in the bin – and makes them delicious.


For this workshop we will be exploring left over pastry from hotels waste by turning them into a delicious kvass. We will also be exploring different uses of more unpopular parts of produce such as chilli tops, cauliflower stems and mussel beards. There will be lots of bootleg condiments made using bootleg techniques that can be applied at home or in a professional kitchen. 


Go home w a 1L jar of Kvass and 1L jar of fun veg ready to ferment and enjoy later.
