Saturday morning begins by a group Miso making session. You'll each smash, roll and push the miso into your jars and over to take home and ferment there on your bench for the next few months, or even years. After a bit to eat (prepared in collaboration with Cooks Shop next door) you'll learn how to make 4 different types of dashi and then the perfect bowl of Miso Soup. Drink your soup, listen to Yoko and get ready for a mochi pounding celebration. A very full early winter day of miso.
*Cookshop is our favourite location for lunch at The Fermentary, and for Hakko Mini we asked them to create a lunch that would complement the workshops we are running over the course of the weekend. It will only be available to those who book the full day here.
